Location: Round Corner Brewing in Melton Mowbray
Position: Full Time
Salary: £27,500 - £30,000 DOE (plus weekend shifts paid at time and a half)
Reports to: Head Brewer

Round Corner Brewing is one of the UK’s most awarded independent breweries.

From our home in the historic Melton Mowbray market, we brew modern, characterful beer and sell it nationwide from pubs and bars to retailers and our own taproom. Since 2018 we’ve won multiple gold medals and trophies at the International Brewing Awards, World Beer Awards, International Beer Challenge and European Beer Challenge.

With production capacity expanding in 2027, with the installation of a new fermentation cellar, we’re now looking for a passionate and skilled Production Brewer to join our dynamic team.

It’s a hands-on, quality-focused role for someone who wants to build their brewing knowledge — brewing, cellar work, packaging and quality, on kit that’s producing some of the best beer in the country.

The Role

You’ll be a core member of our small brewing team, brewing to spec and taking pride in the detail of every batch.

This is a broad, “sleeves rolled up” role combining brewing, cellar work, packaging and quality — expect to be hands-on across all of it. You’ll brew on our 20hL Le Hui steam-heated 3-vessel brewhouse and package on our Pneumatic Scale Angelus CB50 can line.

Brewing and cellar operations

• Run wort production on our 20hL Le Hui brewhouse to spec, every time
• Track and manage fermentations and dry-hopping
• Transfer beer to bright beer tanks and conduct final quality checks before packaging.
• Fit into our weekend brewer roster

Quality, safety and compliance

• Carry out routine quality checks including gravity, pH, yeast counts, TPO, CO₂, VDK and PCR microbiological testing.
• Perform and verify CIP & SIP of FVs, BBTs, can line and brewhouse using ATP bioluminescence
• Verify cleaning using ATP testing and follow agreed SOPs.
• Maintain accurate and timely records in BREWW, including brew sheets, fermentation logs, CIP logs and raw-material movements.
• Help us breeze through our SALSA + Beer accreditation

Packaging

• Operate our PSA CB50 canning line, keg filling, cask cleaning and cask racking.
• Quality checks throughout packaging runs.

Development and improvement

• Work closely with the Head Brewer on single-batch releases and collaborations.
  
• Contribute ideas that improve quality, consistency, yield, safety or efficiency.
• Build your technical brewing knowledge and work towards further IBD qualifications.
  

About you:

You may currently be a Brewer or Assistant Brewer looking for greater ownership, responsibility and experience across the full production process.

You’re organised, proactive and happy being hands-on, and thrive working in a small team to hit goals and drive business growth.

You understand that craft is about the relentless pursuit of perfection, so you sweat the small stuff.

We would love you to have:

• 2+ years’ commercial brewing experience. 
• IBD General Certificate in Brewing or an apprenticeship in brewing (or equivalent) required
• Strong problem solving — if you can’t fix it, you’re pragmatic and proactive in finding out how
• A genuine commitment to quality and safety
• Ability to lift and move 25kg repetitively
• Ability to work required shifts including regular weekends
• Comfortable working collaboratively in a small team

Useful but not essential

• Forklift licence.
