Straw golden in colour, this delicate ale has been cold matured; reminiscent of a lager but with Kölsch yeast providing esters that give a gentle fruitiness and aromas of wine gums. Hallertau Mittlefruh and Blanc are blended to add subtle floral and chardonnay like aromatics.
LE Dream is the return leg of our collaboration with our LE neighbours and friends at Brayrbooke brewery. This is the perfect beer for us to brew together, a hybrid - fermented like an ale, matured like a lager. Kölsch was first brewed in Cologne 200 years ago to combat the rise in lager brewing. We believe there is room for both.
